Veneto - Fidora Ripasso Organic
This is one close to Luigi's heart — a certified organic and biodynamic Ripasso from the Fidora estate in Veneto's Valpolicella region. Made with Corvina, Corvinone, and Rondinella grapes, this wine undergoes the traditional Ripasso method: a second fermentation on Amarone lees that adds incredible depth and richness.
Expect aromas of ripe black cherry, dried plum, and balsamic spice. The palate is round and velvety with flavours of dark fruit, cocoa, and a touch of vanilla, finishing long and warm. At 14% ABV, it's full-bodied yet beautifully balanced.
Pairs beautifully with: Braised short ribs, aged Parmigiano, or a hearty mushroom risotto.
