The Tornatore family has farmed the northern slopes of Mount Etna since the 1860s, but it was Francesco Tornatore who, in 2012, built the modern namesake winery in Castiglione di Sicilia and set out to define what Etna's white wines could be. The estate now farms roughly 60 hectares across the contrada of Pietrarizzo and Trimarchisa, working exclusively with the volcano's native grape varieties on terraced, high-altitude vineyards.

Zottorinotto is Tornatore's single-vineyard Etna Bianco, grown at 700-750 meters on mineral-rich basaltic soil, from a blend of Carricante and Catarratto. Time spent aging on the lees gives it a rounder, more textured feel than a typical Etna white: expect creamy vanilla, yellow apple and peach, opening into honeyed notes and wild broom flowers that grow across the mountain's slopes. The palate stays true to its volcanic roots — bright citrus and mineral-laced acidity with a distinct saline, smoky edge. Pour it with grilled seafood, a creamy risotto, or roast chicken.
