Roccato is Rocca delle Macìe's flagship Super Tuscan, first produced in 1988 as an answer to the international wines reshaping Tuscany at the time. It began as an equal blend of Sangiovese and Cabernet Sauvignon, but starting with the 2015 vintage the estate committed fully to the international grape, and Roccato has been bottled as a pure Cabernet Sauvignon ever since. The fruit is hand-selected from the Zingarelli family's original Le Macìe estate in Castellina in Chianti — the same ground Italo Zingarelli built the winery on in 1973 — now overseen by his son Sergio and the next generation of the family.

After fermentation in concrete vats, the wine spends 18 months in French barrique, half of it new oak, then rests at least 20 months more in bottle before release — a serious regime built for a wine meant to age. The result is deep ruby red fading toward garnet at the rim, with a bouquet layering red and black fruit against cocoa, vanilla and roasted coffee, backed by a savory edge of black pepper and spice. On the palate it's warm and full, with firm, well-knit tannins carrying through to a long finish. Pour it with a grilled ribeye, braised short rib, or a wedge of aged pecorino.
