A light, easy-drinking junmai from Fukumitsuya, a Kanazawa brewery founded in 1625 that has made nothing but pure-rice sake since 1960. Brewed with the house sorei method and the brewery's own FS9 yeast, it comes in at just 9% alcohol, soft and smooth on the palate with a gentle sweetness and a clean, quick finish. The name means wind, water, people, a nod to the seasons, the brewery's spring water, and the hands that make it. Serve well chilled or at room temperature with lighter dishes: carpaccio, caprese, seafood, tofu, or anything with tomato, citrus or fresh cheese.
