The grapes were foot-trodden with roughly a quarter left as whole clusters, fermented on the skins for about two weeks, then gently pressed and matured ten months in stainless steel. Bottled unfined and unfiltered with a low sulfur dose.\u003c\/p\u003e\u003cp\u003eBlueberry, raspberry and red plum with violet and dried herb on the nose. The palate is crunchy and fresh — mixed berries, savoury wild herbs, violet, earth, leather and spice — with a long, refreshing finish. Light-bodied and dry.\u003c\/p\u003e\u003cp\u003eA red for the table rather than the cellar: charcuterie, roast chicken, grilled vegetables, anything with herbs.
